Ingredients
● 1 cup butter, softened
● ½ cup shortening
● 2 cups white sugar
● 2/3 cup molasses
● 2 eggs
● 2 teaspoons lemon zest
● 5 cups flour
● 4 teaspoons ginger
● 2 teaspoons cinnamon
● 2 teaspoons baking powder
● 2 teaspoons baking soda
● 1 teaspoon ground cloves
● 1 teaspoon salt
● 1 teaspoon vanilla
Preparation
1. Heat oven to 375 degrees.
2. Use a cookie scoop or roll dough into 1-inch balls.
3. Roll balls in sugar and place 2 inches apart on a cookie sheet.
4. Bake 9-10 minutes. Let cool on sheet a few minutes before removing to a cookie rack to cool completely.
5. Store in an air-tight container.
