Lamb’s Rice Pudding

Ingredients

  • 1 cup long grain rice (I use sticky rice because that is what I have stored and I like it better)

  • 1 cup sugar

  • 8 cups milk

  • 4 eggs

  • 2 (more) cups milk

  • ¼ cup (more) sugar

  • 2 teaspoon vanilla

  • Ground cinnamon

Preparation

  1. In a large pan, combine rice with 1 cup sugar and 8 cups milk. Stir to blend.

  2. Cook over medium heat, stirring constantly, until rice is tender.

  3. In a mixing bowl, combine eggs, 2 cups milk, ¼ cup sugar and vanilla. Beat well with mixer.

  4. When the rice is tender, add egg mixture just until it starts to come to a boil.

  5. Remove from heat; cool, then chill.


Alternate cooking method:

Now, to make it the easy way, do like I do and cook it in the crock-pot.

  1. Put all of the ingredients in the crock pot.

  2. Turn it on high and cook for about an hour, then on low for about 2 to 2 ½ hours.

  3. Stir it every once in a while, so it won’t burn on the bottom.



    It is so yummy, and it just amazes me how far 1-cup of rice will go.
