Impossible Egg Custard Pie

Ingredients

  • 1 cup sugar

  • 3 eggs

  • 3 tablespoons flour

  • ½ teaspoon salt

  • 1 teaspoon vanilla

  • 2 tablespoons butter

  • 1 13oz. can evaporated milk

Preparation

  1. Beat together all ingredients except the milk.

  2. Add milk and mix. Pour into a greased 9x13 pan or greased 9” pie pan.

  3. Sprinkle with cinnamon and bake at 350° for 45 minutes.

  4. Sprinkle with powdered sugar (optional), and serve warm or cold.


They say that you can substitute cooked and drained squash (possibly butternut?) in place of the milk. I haven’t tried it, but there are options.
