Cornmeal Popovers

About the Recipe

Ingredients

  • 1 ½ cups all-purpose flour

  • ½ cup fine white cornmeal

  • 1 ½ teaspoons kosher salt

  • 1 ¾ cups whole milk

  • 4 large eggs

  • ¼ cup butter, melted

Preparation

  1. Preheat muffin tin to 450°.

  2. Wisk eggs and milk together.

  3. Mix dry ingredients in separate bowl and then add the mixed milk and eggs.

  4. Put about a teaspoon of the melted butter in the bottom of each muffin hole and then fill each about ½ to a 1/3 full.

  5. Bake at 450° for 25-30 minutes.


So good as a side for a steaming bowl of chili or soup. YUMMY!
